What I Loved in April

Looking for a simple coffee recipe, a great pair of shorts to add to your spring wardrobe, or a way to make great dairy-free banana bread? All that and more and this list of everything I loved this April!

New Music: ‘The Great Divide: The Last of the Bugs’ by Noah Kahan

This is the most perfect transitional spring to summer to fall album. Although it has some heavy themes and strong language, I’ve really enjoyed having this on while working. It’s moody, but I like moody. Some themes don’t resonate with me but the album as a whole is objectively well-written and produced. A great album to listen to from start to finish. Will definitely be the soundtrack to my spring season.


Reading: Our State Magazine, April

This may not resonate with you as much if you’re not an North Carolina native, but April’s edition of Our State was so interesting. Between the engaging articles, mouthwatering recipes, and sharing lots of NC bucket list locations, this was perfect reading to have while sitting on the pack porch with an iced cold glass of tea, ushering in the first warm days of spring.

These shorts are p e r f e c t for this season. I got the brown gingham ones shown here, but there are literally too many colors to choose from. Super light & breathable, and I’ve been wearing them non-stop since I got them!


Watching: Home Town

This one is a bit random, sure. But here’s where me starting this show that began airing in 2016 started…

I was riding through my own home town on my way back from my parents house when I began to think about how I wish I could restore all the old, dilapidated farmhouses I was passing. All they needed was a little care and restoration, and they would make such beautiful places to raise families. One day I’d love to spend my time managing the restoration and improvement of these old homes that are sitting forgotten. As I thought about this on my list of aspirations, I said, “wait, isn’t there a show about this?”

Later in the weekend I started watching Home Town, where Ben and Erin Napier are doing the exact thing I’d like to. Albeit not farmhouses, but quaint little homes in the heart of where they live in Laurel, Mississippi. Watching has been a wonderful source of inspiration.

Baking: Dairy-Free Banana Bread

I’m currently dairy-free at the moment, and found the perfect recipe to help get rid of the over-ripe bananas on the counter!

I used a little extra salt and some plant-based butter. My family loved it!

Sipping: Honey Iced Coffee with Oatmilk

This isn’t overly complicated or special, but I would be remiss if I don’t include it in this round up because I’ve been drinking it so often.

All you need for this is:

  • Cold brew or room temp black coffee
  • Barista-style oatmilk
  • Pinch of sugar
  • Generous amount of honey
  • Lots of ice!

I don’t know what it is about it, but it is the most refreshing iced coffee recipe that has been my constant go to!
